About Us
Bakon™ is the creation of David W. Jones, a lifelong cook, media producer, researcher, investigator and entrepreneur.

While living on one of Portland's floating homes on the Willamette River during Covid, David decided to try and avoid having meat in the house or eating meat since his girlfriend was a lifelong vegetarian. Over time he tried a number of plant based meats available at grocery stores and felt they were simply not as tasty, satisfying or healthy as he wished for. So, as a lifelong cook he began to experiment with healthy whole plant foods to perfect the meatless meals that would satisfy his protein cravings.

Success came little by little. Everyone he cooked for liked his Texas Vegan Chili, and his early tofu-based meat substitutes, encouraging him always to make more. He found that if you want to make a better tofu-based meat substitute, you can't begin after the tofu is made.... you need to start before that. David began to learn the ancient art of tofu making, from bean to cake. After he mastered tofu making, he began to experiment by making changes and additions to the process to create new, never tasted before tofu products. Several innovative techniques plus his knowledge of old world meat curing with salt rubs and hardwood smoke led to the delicious, crispy, mouth-watering taste of the Bakon™ people across the USA love today.
David began selling at the Beaverton Farmers Market outside Portland, Oregon on a cold and rainy day in January 2021, then was picked up by People's Food Coop of Portland and expanded into the New Seasons Market chain of regional grocery stores followed soon after by the Market of Choice chain across Oregon. Customer response was overwhelming, and a few months later he partnered with longtime entrepreneur Jared Hansen to help found the company, Thrilling Foods, and to help make it capable of bringing Bakon™ and other plant-based meat products to a global market.
Practices
Thrilling Bakon™ is made from just 8 simple ingredients anyone can understand:

Soy milk (water, non-GMO soybeans)
Sustainable non-hydrogenated palm oil shortening (zero deforestation)
Yeast (a natural flavor)
Natural vegetable color (radish and paprika)
Maple syrup
Sea salt
Black pepper
Citric acid

Our palm oil is independently certified sustainable by the Roundtable for Sustainable Palm Oil, which has developed a set of environmental and social criteria which companies must comply with

Cooking Instructions: Do not Freeze
Thrilling Bakon™ fries in its own fat, just like pork bacon. You can cook it in a skillet, bake it on a pan in an oven or use an air fryer. Just don't microwave it please.

Skillet method - Simply fry in a non-stick skillet over medium to medium-low heat for about 5 to 7 minutes per side. All meat and meat-like foods can stick to a skillet at first, but just wait and don't try to turn it yet. Bakon will release on its own without any coaxing or rough prodding from you. Once Bakon has decided to release itself (you'll see it has shrunk a bit and a bit of fat has been cooked out) you can flip it easily. As it cooks along on the next side you can tell if its done to your liking by lifting it with a fork. Limp bacon that droops across the fork is not done yet. A gentle eyebrow arch will provide a chewy and crunchy Bakon, and a ruler straight piece will be very crispy with little chewiness.

Oven method - Place parchment in your pan if you don't like unnecessary clean up and then place as many strips on as wish. Set the oven to 350-375 degrees and wait for 15-20 minutes. Every oven cooks a bit differently so test it now and then and you will learn how many minutes are good in your oven. No need to turn the strips. Simply lift and look for a gentle curve or even less of a curve as described above in skillet method to determine when done to your liking.
